When we decided that we wanted to focus on fruit back in the day dreaming stage of owning a farm, we knew that we were going to face many challenges. Growing organic fruit in the hot, humid, insect heavy South can be very (very) difficult. We needed to make sure that we had a product for all the imperfect fruit that was bound to come our way. Even the smallest of holes in fruit lend themselves to be unmarketable because of the fast deterioration that occurs. Most folks will make jams and jellys from these fruits but the preserved products I make contain only fractions of the sugar found in most fruit spreads. As a result of my desire to keep the sugar content low and the fruit content very high, I have to use only premium fruit for our conserves. Sooo we thought 'Whatelse can we make? Hummmm.... fruit in the hot Ga summer? What to do? What will people love?'
POW! Honey Pops was born!!
Our Honey Pops are popsicles made from our strawberries grown here on the farm and honey from our bees. That's it! No sugar no fillers no guilt! They are the dessert you can have for breakfast. This is a treat you will want to feed your kids....and feed yourself. Healthy and delicious! (And lets not forget, produced using solar power)
We spent a long time (2 years bit by bit) working out the production kinks and just when we got it all figured out it was time for the first farmers market.
It was a pretty cold day so we were nervous about the Honey Pops debut on the market scene. We kept quiet about them until someone dared asked about our sign.
This is our first customer! This was her first time at the farmers markets and our first Honey Pop sale. She bought 3 and was so excited about them! We were too!
As the morning progressed, the weather remained pretty cool but folks were into the Pops!
I mean really, look at that smile!
We are currently stock piling as many strawberry pops as we can possibly make so we should have some for the next few months. We also plan to have other flavors made with the same concept.. naturally grown local fruit popsicles sweetened only with a bit of local honey! Sustainably Grown Delights! Thats our thing! Come on out on Wed and Sat and get you one...or three.

The pops will be inspired by whatever fruit is in season. Blueberry, melon, pear, maybe even tomatoes:)
